One Vegan Week. Round deux.

Yes I know there are only 7 days in a week. Let's call this round deux.

I had two strays in my 7 days. Once with a latte and another with cream cheese on a bagel.

There is 5 lbs less of me which is surprising me. My calories went from about 1600 a day before to 900-1250 after.  

I didn't miss meat or dairy. That is also surprising me but when food is this good and satisfying who  cares if it's a steak or anti cancer soup? good is good.

meatless balls with blackberry barbecue sauce

ceasar salad (mock dressing)

vegan chocolate chip cookie

gin and tonic



Speaking of meat, today's feature food is meatless balls. I had the mama mia gardenburger variety years ago and love them but alas they are not vegan. They are tasty so by all means if you can find them buy them.

These are supposed to be baked but easy off is jamming in my oven today so I opted to grill pan cook them. It's my way of using up that short grain brown rice and leftover trader joe's cooked lentils from last week.

Vegetarian meatballs

  • 1/2 cup cooked lentil
  • 1 cup cooked brown rice
  • 1/4 cup oats
  • 1/3 cup wheat germ
  • 1 tablespoon soy sauce
  • 2 tablespoons olive oil
  • 2 teaspoons lemon juice
  • 1/4 cup whole wheat flour
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon balsamic vinegar
  • 1/8 teaspoon nutmeg
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon maple syrup (could sub molasses)
  • 1 teaspoons dry mustard

 Preheat oven to 400°.

Wet hands and form mixture into balls about 1-1/2″ in diameter. You should get around 16. Place on a baking sheet.

Bake in preheated oven for 10-15 minutes, turning once halfway through baking time. Let rest for 10 minutes after baking to firm up.
